Today I decided that I wanted to do some baking. I love baking and don’t really get round to doing as much as I’d like to in Bath because a) I feel guilty not doing uni work while we’ve still got projects going on and b) whenever I bake while I’m at uni I end up eating what I make all myself and that’s not healthy. We finished projects a week ago now though and I felt like treating myself so here’s what I made…

Looks deeee-lish right!? They’re chocolate and strawberry cheesecake brownies. I’m not sure if that sounds wrong or not….it sounds right to me because I love chocolate, brownies and strawberry cheesecake, so if you’re like me and want to try out these badboys (bad on account of the amount of calories they probably contain, I’m not sure how many that is because I don’t really care) then here’s how I made them (influenced somewhat by this recipe here)…
First off you need to preheat your oven to 180º/Fan Assisted 160º/Gas mark 5 and line a 20x30cm tray with greaseproof paper, or if you’re like me and don’t have one of those use 2 smaller trays or the same smaller tray twice, whetevs, I’m sure you’ll work it out.
Take 300g of soft cheese (or 400g if you feel like splashing out, the original recipe I used said 400g but I could only find 300g tubs and I’m cheap) and mix/whisk it together with 125g caster sugar and 2 eggs. Add in some strawberries at some point, I used about 7….they were left over from a box I brought last week….you could probably use more for optimum strawberry-ness though. The end result should be a tiny bit lumpy (obvs the strawberries will be lumpy but also a few cheesy lumps here and there) but mainly smooth.
Then melt 200g of dark chocolate with 200g of unsalted butter - easiest to do in the microwave in 30 second blasts. While you’re doing this you can whisk together 3 more eggs and 250g of sugar - I’m pretty sure this sugar just has to be soft-ish, I used a mix of light brown, dark brown and demerara because it’s what I had left over and it tastes gooood. Stir the chocolate mix into the sugar mix and all you’ve got left to do is fold in 200g of plain flour.
Once you’ve got both the mixes, pour half the brownie mix into your baking tray/whatever you’re cooking it in and level it out. Then pour all the cheesecake mix in and dollop the other half of the brownie mix on top. When you’ve got everything in give the whole lot a tiny stir with the end of a knife or skewer to make it look sort of marbled before you put it in the oven.
Leave it in there for 35-40 minutes and there you have it! A deliciously sickly mess.
